Description

A flavorful fusion dish layering seasoned taco beef, tortillas, cheese, and salsa baked into a hearty and satisfying casserole.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 1 tablespoon homemade)
  • 1/2 cup water
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup salsa
  • 6 small flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Heat olive oil in a skillet and sauté onion until soft, then add garlic and cook briefly.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and water, simmering for 5 minutes.
  5. Add diced tomatoes, salsa, black beans, corn, salt, and pepper. Mix well.
  6. Spread a thin layer of meat mixture in the baking dish.
  7. Layer tortillas over the mixture, followed by more meat mixture and cheese.
  8. Repeat layers, finishing with cheese on top.
  9. Dollop sour cream over the top layer.
  10. Bake for 25–30 minutes until bubbly and golden.
  11. Let rest for 5–10 minutes before slicing.
  12. Garnish with cilantro and serve.
