A flavorful fusion dish layering seasoned taco beef, tortillas, cheese, and salsa baked into a hearty and satisfying casserole.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 1 tablespoon homemade)
- 1/2 cup water
- 1 can (14 oz) diced tomatoes, drained
- 1 cup salsa
- 6 small flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Heat olive oil in a skillet and sauté onion until soft, then add garlic and cook briefly.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and water, simmering for 5 minutes.
- Add diced tomatoes, salsa, black beans, corn, salt, and pepper. Mix well.
- Spread a thin layer of meat mixture in the baking dish.
- Layer tortillas over the mixture, followed by more meat mixture and cheese.
- Repeat layers, finishing with cheese on top.
- Dollop sour cream over the top layer.
- Bake for 25–30 minutes until bubbly and golden.
- Let rest for 5–10 minutes before slicing.
- Garnish with cilantro and serve.
