Description

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup processed cheese (like Velveeta, cubed)
  • 1/2 cup milk
  • 1/2 cup diced tomatoes with green chilies (drained)
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened, about 2–3 minutes.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  5. Stir in taco seasoning and water, simmer for 3–5 minutes.
  6. Reduce heat to low and add cheddar cheese, processed cheese, and milk. Stir until melted and smooth.
  7. Mix in diced tomatoes and sour cream until fully combined.
  8. Season with salt and pepper to taste.
