Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1/2 cup onion (diced)
- 2 cloves garlic (minced)
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1 cup processed cheese (like Velveeta, cubed)
- 1/2 cup milk
- 1/2 cup diced tomatoes with green chilies (drained)
- 1/4 cup sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 2–3 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Stir in taco seasoning and water, simmer for 3–5 minutes.
- Reduce heat to low and add cheddar cheese, processed cheese, and milk. Stir until melted and smooth.
- Mix in diced tomatoes and sour cream until fully combined.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro if desired and serve warm.
