Sweet, spicy, and tangy sticky chili lime shrimp served over fluffy rice with fresh vegetables—an easy and vibrant bowl packed with bold flavor.


Ingredients

  • 500g shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes
  • 1 cup cucumber, sliced
  • 1 avocado, sliced
  • 1/2 cup shredded carrots
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame seeds


Instructions

  1. In a bowl, mix sweet chili sauce, soy sauce, honey, lime juice, lime zest, garlic, and chili flakes.
  2. Add shrimp and toss to coat.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook shrimp for 2-3 minutes per side until pink and slightly caramelized.
  5. Pour remaining sauce into the skillet and simmer for 1 minute until sticky.
  6. Divide cooked rice into serving bowls.
  7. Top with sticky shrimp, cucumber, avocado, and shredded carrots.
  8. Drizzle extra sauce from the skillet over the bowls.
  9. Garnish with green onions and sesame seeds before serving.

  • Do not overcook shrimp to keep them tender.
