Ingredients
- 500g shrimp, peeled and deveined
- 2 cups cooked rice
- 1 tablespoon olive oil
- 2 tablespoons sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1/2 teaspoon chili flakes
- 1 cup cucumber, sliced
- 1 avocado, sliced
- 1/2 cup shredded carrots
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- In a bowl, mix sweet chili sauce, soy sauce, honey, lime juice, lime zest, garlic, and chili flakes.
- Add shrimp and toss to coat.
- Heat olive oil in a skillet over medium-high heat.
- Cook shrimp for 2-3 minutes per side until pink and slightly caramelized.
- Pour remaining sauce into the skillet and simmer for 1 minute until sticky.
- Divide cooked rice into serving bowls.
- Top with sticky shrimp, cucumber, avocado, and shredded carrots.
- Drizzle extra sauce from the skillet over the bowls.
- Garnish with green onions and sesame seeds before serving.
Notes
- Do not overcook shrimp to keep them tender.
- Adjust chili flakes for preferred spice level.
