Ingredients
- 1 1/2 lbs sirloin steak, cut into bite-sized pieces
- 1 1/2 lbs baby potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon butter
- 1 cup queso cheese sauce
- 1 cup shredded cheddar cheese
- 1/4 cup cooked turkey bacon or beef bacon, crumbled
- 2 green onions, sliced
- 1/4 cup sour cream
- Fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced potatoes with olive oil, half of the salt, pepper, paprika, garlic powder, and onion powder.
- Spread potatoes on a baking sheet and roast for 30-35 minutes until crispy and golden.
- Season steak bites with remaining spices.
- Heat butter in a skillet over medium-high heat.
- Add steak bites and cook for 3-5 minutes until browned and cooked to desired doneness.
- Warm queso cheese sauce in a small saucepan.
- Assemble bowls with roasted potatoes as the base.
- Top with steak bites, queso sauce, shredded cheddar cheese, and crumbled bacon.
- Add sour cream and garnish with green onions and parsley.
- Serve immediately while hot.
