Ingredients

  • 1 1/2 lbs sirloin steak, cut into bite-sized pieces
  • 1 1/2 lbs baby potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon butter
  • 1 cup queso cheese sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked turkey bacon or beef bacon, crumbled
  • 2 green onions, sliced
  • 1/4 cup sour cream
  • Fresh parsley for garnish


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, half of the salt, pepper, paprika, garlic powder, and onion powder.
  3. Spread potatoes on a baking sheet and roast for 30-35 minutes until crispy and golden.
  4. Season steak bites with remaining spices.
  5. Heat butter in a skillet over medium-high heat.
  6. Add steak bites and cook for 3-5 minutes until browned and cooked to desired doneness.
  7. Warm queso cheese sauce in a small saucepan.
  8. Assemble bowls with roasted potatoes as the base.
  9. Top with steak bites, queso sauce, shredded cheddar cheese, and crumbled bacon.
  10. Add sour cream and garnish with green onions and parsley.
  11. Serve immediately while hot.
