Ingredients

  • 1 cup quick-cooking grits
  • 4 cups water or milk
  • 2 tbsp butter
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 breakfast sausage links or patties
  • 6 large eggs
  • 2 tbsp milk (for eggs)
  • 1 tbsp butter (for eggs)


Instructions

  1. Bring water or milk to a boil in a saucepan. Add salt and slowly whisk in grits.
  2. Reduce heat to low and cook for 5–7 minutes, stirring frequently until thick and creamy.
  3. Stir in butter and cheese (if using), then keep warm.
  4. In a skillet, cook sausage over medium heat until browned and cooked through. Set aside.
  5. In a bowl, whisk eggs with milk, salt, and pepper.
  6. Melt butter in a skillet over medium-low heat and add eggs.
  7. Cook gently, stirring frequently, until eggs are soft and fluffy.
  8. Plate grits, sausage, and scrambled eggs together.
  9. Serve hot.
