Description

Soft and chewy lemon sugar cookies with a bright citrus flavor, lightly sweetened and perfect for a refreshing treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for rolling)


Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg, lemon zest, lemon juice, and vanilla extract; mix well.
  5. Gradually add dry ingredients to the wet mixture and combine until a dough forms.
  6. Scoop dough into small balls and roll in sugar.
  7. Place on baking sheet and slightly flatten each ball.
  8. Bake for 8–10 minutes until edges are set and centers are soft.
  9. Cool on a rack before serving.

Notes

  • Do not overbake to keep cookies soft.
  • Use fresh lemon juice for best flavor.
  • Chill dough for 15 minutes if too sticky.
