Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 1 egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup sugar (for rolling)
Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add egg, lemon zest, lemon juice, and vanilla extract; mix well.
- Gradually add dry ingredients to the wet mixture and combine until a dough forms.
- Scoop dough into small balls and roll in sugar.
- Place on baking sheet and slightly flatten each ball.
- Bake for 8–10 minutes until edges are set and centers are soft.
- Cool on a rack before serving.
Notes
- Do not overbake to keep cookies soft.
- Use fresh lemon juice for best flavor.
- Chill dough for 15 minutes if too sticky.
- Add a light lemon glaze for extra sweetness.
