Description

A flavorful one-pan garlic butter chicken and potatoes dish with juicy chicken and crispy golden potatoes, perfect for an easy and satisfying meal.


Ingredients

  • 4 chicken thighs or breasts
  • 3 cups baby potatoes, halved
  • 3 tablespoons butter, melted
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 tablespoon chopped parsley for garnish


Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, mix melted butter, olive oil, garlic, paprika, salt, pepper, thyme, and oregano.
  3. Toss potatoes in half of the mixture and spread on a baking sheet.
  4. Place chicken on the same pan and brush with remaining mixture.
  5. Bake for 35–40 minutes until chicken is cooked through and potatoes are golden.
  6. Flip potatoes halfway through cooking for even crispiness.
  7. Garnish with chopped parsley before serving.
  8. Serve hot and enjoy.
