A flavorful one-pan garlic butter chicken and potatoes dish with juicy chicken and crispy golden potatoes, perfect for an easy and satisfying meal.
Ingredients
- 4 chicken thighs or breasts
- 3 cups baby potatoes, halved
- 3 tablespoons butter, melted
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 tablespoon chopped parsley for garnish
Instructions
- Preheat oven to 200°C (400°F).
- In a bowl, mix melted butter, olive oil, garlic, paprika, salt, pepper, thyme, and oregano.
- Toss potatoes in half of the mixture and spread on a baking sheet.
- Place chicken on the same pan and brush with remaining mixture.
- Bake for 35–40 minutes until chicken is cooked through and potatoes are golden.
- Flip potatoes halfway through cooking for even crispiness.
- Garnish with chopped parsley before serving.
- Serve hot and enjoy.
