No Bake Chocolate Eclair Dessert is a layered treat made with graham crackers, creamy vanilla pudding filling, and rich chocolate frosting that softens into a cake-like texture as it chills.
Ingredients
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping
- 1 box graham crackers
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 tbsp butter
Instructions
- In a large bowl whisk together the vanilla pudding mix and cold milk for about 2 minutes until thickened.
- Fold the whipped topping into the pudding until smooth and fully combined.
- Arrange a single layer of graham crackers on the bottom of a 9×13-inch dish.
- Spread half of the pudding mixture evenly over the graham crackers.
- Add another layer of graham crackers on top.
- Spread the remaining pudding mixture evenly.
- Place a final layer of graham crackers on top.
- In a small saucepan heat the heavy cream until hot but not boiling.
- Pour the hot cream over the chocolate chips and butter, let sit for 1 minute, then stir until smooth to form a ganache.
- Spread the chocolate ganache evenly over the top layer.
- Refrigerate for at least 4 hours or overnight until the graham crackers soften.
- Slice and serve chilled.
Notes
- Chilling overnight gives the best soft, cake-like texture.
- You can use chocolate frosting instead of homemade ganache if preferred.
- Cover tightly and store in the refrigerator for up to 4 days.
- For extra flavor, add a layer of sliced bananas between the pudding layers.
