Description

No Bake Chocolate Eclair Dessert is a layered treat made with graham crackers, creamy vanilla pudding filling, and rich chocolate frosting that softens into a cake-like texture as it chills.


Ingredients

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping
  • 1 box graham crackers
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tbsp butter


Instructions

  1. In a large bowl whisk together the vanilla pudding mix and cold milk for about 2 minutes until thickened.
  2. Fold the whipped topping into the pudding until smooth and fully combined.
  3. Arrange a single layer of graham crackers on the bottom of a 9×13-inch dish.
  4. Spread half of the pudding mixture evenly over the graham crackers.
  5. Add another layer of graham crackers on top.
  6. Spread the remaining pudding mixture evenly.
  7. Place a final layer of graham crackers on top.
  8. In a small saucepan heat the heavy cream until hot but not boiling.
  9. Pour the hot cream over the chocolate chips and butter, let sit for 1 minute, then stir until smooth to form a ganache.
  10. Spread the chocolate ganache evenly over the top layer.
  11. Refrigerate for at least 4 hours or overnight until the graham crackers soften.
  12. Slice and serve chilled.

Notes

  • Chilling overnight gives the best soft, cake-like texture.
  • You can use chocolate frosting instead of homemade ganache if preferred.
  • Cover tightly and store in the refrigerator for up to 4 days.
