Mediterranean Fish Bowl is a fresh, vibrant meal featuring seasoned fish served over grains with crisp vegetables, olives, and a light lemon dressing for a healthy and balanced dish.
Ingredients
- 2 fish fillets (such as cod, salmon, or tilapia)
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup olives, sliced
- 2 tbsp feta cheese (optional)
- 1 tbsp lemon juice
- 1 tbsp olive oil (for dressing)
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 200°C (400°F) or heat a pan over medium heat.
- Rub fish with olive oil, paprika, garlic powder, salt, and black pepper.
- Bake for 12–15 minutes or pan-sear for 4–5 minutes per side until cooked through.
- Prepare rice or quinoa if not already cooked.
- In a bowl, combine tomatoes, cucumber, red onion, olives, and parsley.
- In a small bowl, whisk lemon juice with olive oil to make dressing.
- Assemble bowls with a base of rice or quinoa.
- Add cooked fish on top and surround with vegetable mixture.
- Drizzle dressing over everything and top with feta cheese if desired.
- Serve immediately.
