Description

Low Carb Pizza Stuffed Chicken is a cheesy and flavorful chicken dinner stuffed with pizza sauce, mozzarella, and turkey pepperoni, then baked until juicy and golden for a satisfying low-carb meal.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 20 slices turkey pepperoni
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon olive oil
  • Fresh basil or parsley for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice a pocket into each chicken breast without cutting completely through.
  3. Season chicken with salt, black pepper, Italian seasoning, and garlic powder.
  4. Stuff each chicken breast with pizza sauce, mozzarella cheese, and turkey pepperoni slices.
  5. Secure with toothpicks if needed.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear chicken for 2-3 minutes per side until lightly golden.
  8. Sprinkle parmesan cheese over the chicken.
  9. Transfer skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
  10. Garnish with fresh basil or parsley before serving.
