Ingredients

  • 1 bag (28 oz) frozen French fries
  • 1 lb large shrimp, peeled and deveined

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup sour cream
  • 2 tablespoons chopped cilantro
  • 2 green onions, sliced


Instructions

  1. Cook French fries according to package instructions until crispy and golden.
  2. In a bowl, season shrimp with paprika, garlic powder, chili powder, and salt.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook shrimp for 2-3 minutes per side until pink and fully cooked. Set aside.
  5. In a saucepan, melt butter over medium heat.
  6. Whisk in flour and cook for 1 minute.
  7. Slowly whisk in milk until smooth and slightly thickened.
