Ingredients
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons cream cheese
- 3/4 cup almond flour
- 1 egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon Italian seasoning
- 1/4 cup low-carb marinara sauce
- 1/2 cup sliced pepperoni
- 1/2 cup shredded mozzarella (for topping)
Instructions
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt mozzarella and cream cheese until smooth.
- Stir in almond flour, egg, baking powder, and Italian seasoning to form a dough.
- Divide dough into small portions and shape into bite-sized balls or flatten slightly.
- Place on baking sheet and bake for 8-10 minutes until lightly golden.
- Remove from oven and top each bite with a small amount of marinara, shredded mozzarella, and pepperoni.
- Return to oven and bake for another 5-7 minutes until cheese is melted and bubbly.
- Let cool slightly before serving.
