Ingredients
- 1 lb sea scallops, patted dry
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 thick slices sourdough or French bread
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- Lemon wedges for serving
Instructions
- Preheat oven broiler and line a baking sheet with parchment paper.
- Brush bread slices lightly with olive oil and toast under the broiler for 1-2 minutes per side until lightly golden.
- Season scallops with salt and black pepper.
- Heat butter and remaining olive oil in a skillet over medium-high heat.
- Add scallops and sear for 2-3 minutes per side until golden and cooked through.
- Reduce heat to medium and add garlic, lemon juice, and lemon zest. Cook for 30 seconds while tossing scallops gently.
- Place scallops evenly over toasted bread slices.
- Top with mozzarella cheese and parmesan cheese.
- Broil for 1-2 minutes until cheese is melted and bubbly.
- Garnish with parsley and serve with lemon wedges.
