Ingredients

  • 1 lb sea scallops, patted dry
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 thick slices sourdough or French bread
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped parsley
  • Lemon wedges for serving


Instructions

  1. Preheat oven broiler and line a baking sheet with parchment paper.
  2. Brush bread slices lightly with olive oil and toast under the broiler for 1-2 minutes per side until lightly golden.
  3. Season scallops with salt and black pepper.
  4. Heat butter and remaining olive oil in a skillet over medium-high heat.
  5. Add scallops and sear for 2-3 minutes per side until golden and cooked through.
  6. Reduce heat to medium and add garlic, lemon juice, and lemon zest. Cook for 30 seconds while tossing scallops gently.
  7. Place scallops evenly over toasted bread slices.
  8. Top with mozzarella cheese and parmesan cheese.
  9. Broil for 1-2 minutes until cheese is melted and bubbly.
  10. Garnish with parsley and serve with lemon wedges.
