Description

Greek Stuffed Onions are a traditional Mediterranean dish featuring tender baked onions filled with a flavorful mixture of rice, ground meat, herbs, and spices, creating a comforting and aromatic meal.

Ingredients

  • 6 large onions
  • 300 g ground beef or lamb
  • 1/2 cup uncooked rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons tomato paste
  • 1 cup vegetable or beef broth
  • Juice of 1 lemon

Instructions

  1. Peel onions and cut a slit down one side. Boil in water for 10 minutes until softened, then carefully separate layers.
  2. In a pan, heat olive oil and sauté chopped onion until soft. Add garlic and cook briefly.
  3. Add ground meat and cook until browned.
  4. Stir in rice, parsley, dill, oregano, cinnamon, salt, pepper, and tomato paste. Cook for 2–3 minutes.
  5. Remove from heat and let mixture cool slightly.
  6. Place a spoonful of filling into each onion layer and roll into a bundle.
  7. Arrange stuffed onions in a baking dish snugly.
  8. Pour broth and lemon juice over the onions.
  9. Cover and bake at 180°C (350°F) for 45–50 minutes until tender and cooked through.

Notes

  • Handle onion layers gently to avoid tearing.
  • You can make a vegetarian version by omitting meat and adding more rice or vegetables.
  • Serve with yogurt or tzatziki for extra flavor.
