Garlic Butter Cod & Green Beans is a light and flavorful one-pan seafood dinner featuring tender flaky cod fillets, crisp green beans, and a rich garlic butter sauce with fresh herbs and lemon.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 12 oz fresh green beans, trimmed
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1 tablespoon chopped parsley
  • Lemon wedges for serving


Instructions

  1. Season cod fillets with salt, black pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add green beans and cook for 4-5 minutes until slightly tender.
  4. Push green beans to one side of the skillet.
  5. Add cod fillets and cook for 3-4 minutes per side until flaky and cooked through.
  6. Reduce heat to low and add butter and garlic to the skillet.
  7. Cook garlic for 30 seconds until fragrant, spooning the garlic butter over the cod.
  8. Stir in lemon juice and Italian seasoning.
  9. Garnish with chopped parsley and serve with lemon wedges.

Notes

  • Pat cod dry before cooking for better browning.
  • Do not overcook cod to keep it tender and flaky.
  • Fresh green beans provide the best texture.
  • Serve with rice, mashed potatoes, or cauliflower rice.
  • Add red pepper flakes for a spicy kick.
