Ingredients
- 4 cod fillets (about 6 oz each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 12 oz fresh green beans, trimmed
- 1 tablespoon lemon juice
- 1 teaspoon Italian seasoning
- 1 tablespoon chopped parsley
- Lemon wedges for serving
Instructions
- Season cod fillets with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium heat.
- Add green beans and cook for 4-5 minutes until slightly tender.
- Push green beans to one side of the skillet.
- Add cod fillets and cook for 3-4 minutes per side until flaky and cooked through.
- Reduce heat to low and add butter and garlic to the skillet.
- Cook garlic for 30 seconds until fragrant, spooning the garlic butter over the cod.
- Stir in lemon juice and Italian seasoning.
- Garnish with chopped parsley and serve with lemon wedges.
Notes
- Pat cod dry before cooking for better browning.
- Do not overcook cod to keep it tender and flaky.
- Fresh green beans provide the best texture.
- Serve with rice, mashed potatoes, or cauliflower rice.
