Description

French Chocolate Flan is a rich and creamy dessert with a silky chocolate custard texture, combining the classic smoothness of flan with deep chocolate flavor for an elegant treat.


Ingredients

  • 500 ml whole milk
  • 200 ml heavy cream
  • 150 g dark chocolate, chopped
  • 3 eggs
  • 2 egg yolks
  • 100 g sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Caramel sauce for base (optional)


Instructions

  1. Preheat oven to 160°C (320°F).
  2. Heat milk and cream in a saucepan until warm (do not boil).
  3. Add chopped chocolate and stir until melted and smooth.
  4. In a bowl, whisk eggs, egg yolks, sugar, vanilla, and salt until combined.
  5. Slowly pour warm chocolate mixture into the eggs while whisking to temper.
  6. If using caramel, pour a thin layer into ramekins or baking dish.
  7. Pour chocolate custard mixture over the caramel.
  8. Place ramekins in a baking dish and fill with hot water halfway up the sides (water bath).
  9. Bake for 35–45 minutes until set but slightly jiggly in the center.
  10. Cool, then refrigerate for at least 3 hours before serving.

  • Use high-quality dark chocolate for best flavor.
  • Do not overbake to maintain a creamy texture.
  • Chill thoroughly for clean slicing or unmolding.
  • Serve with whipped cream or fresh berries.
