Ingredients

  • 1 pre-made pie crust (graham cracker or pastry)
  • 3 ripe bananas, sliced
  • 2 cups milk
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 2 egg yolks
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Bake the pie crust according to package instructions if required, then let it cool completely.
  2. In a saucepan, whisk together sugar and cornstarch, then gradually add milk.
  3. Cook over medium heat, stirring constantly until thickened.
  4. In a separate bowl, whisk egg yolks, then slowly add a small amount of the hot mixture to temper them.
  5. Return the egg mixture to the saucepan and cook for 2 more minutes.
  6. Remove from heat and stir in butter and vanilla extract.
  7. Arrange sliced bananas in the bottom of the crust.
  8. Pour the custard over the bananas and smooth the top.
  9. Refrigerate for at least 2–3 hours until set.
