Ingredients
- 1 1/2 lbs boneless skinless chicken thighs or breasts, cut into pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 large eggs
- 1 cup flour
- 1 cup panko breadcrumbs
- 3 cups baby potatoes
- 2 tablespoons olive oil
- 1/3 cup honey
- 1 tablespoon hot sauce
- 1 teaspoon red pepper flakes
- 2 cups cooked rice
- 1 cup shredded lettuce
- 1 avocado, sliced
- 1/2 cup diced cucumber
- 1/4 cup ranch dressing or spicy mayo
- 2 green onions, sliced
Instructions
- Preheat oven to 425°F (220°C).
- Boil baby potatoes until fork tender, then place on a baking sheet and gently smash them.
- Drizzle smashed potatoes with olive oil and bake for 25-30 minutes until crispy.
- Season chicken with salt, pepper, paprika, and garlic powder.
- Dip chicken pieces into flour, then eggs, then panko breadcrumbs.
- Fry or air fry chicken until crispy and fully cooked.
- In a small saucepan, combine honey, hot sauce, and red pepper flakes. Warm gently.
