Description

Crispy Hot Honey Chicken Smash Bowls are bold and flavorful rice bowls loaded with crispy smashed potatoes, crunchy chicken, spicy hot honey glaze, fresh vegetables, and creamy sauce for a satisfying meal.


Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs or breasts, cut into pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 1 cup flour
  • 1 cup panko breadcrumbs
  • 3 cups baby potatoes
  • 2 tablespoons olive oil
  • 1/3 cup honey
  • 1 tablespoon hot sauce
  • 1 teaspoon red pepper flakes
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • 1/2 cup diced cucumber
  • 1/4 cup ranch dressing or spicy mayo
  • 2 green onions, sliced


Instructions

  1. Preheat oven to 425°F (220°C).
  2. Boil baby potatoes until fork tender, then place on a baking sheet and gently smash them.
  3. Drizzle smashed potatoes with olive oil and bake for 25-30 minutes until crispy.
  4. Season chicken with salt, pepper, paprika, and garlic powder.
  5. Dip chicken pieces into flour, then eggs, then panko breadcrumbs.
  6. Fry or air fry chicken until crispy and fully cooked.
  7. In a small saucepan, combine honey, hot sauce, and red pepper flakes. Warm gently.
  8. Toss crispy chicken in the hot honey sauce.
  9. Assemble bowls with rice, crispy smashed potatoes, lettuce, cucumber, and avocado.
  10. Top with hot honey chicken and drizzle with ranch or spicy mayo.
  11. Garnish with sliced green onions and serve immediately.
