Description
A luxurious yet easy dinner featuring tender scallops seared to perfection and served in a creamy Tuscan-style sauce with garlic, sun-dried tomatoes, and spinach.
Ingredients
- 1 lb sea scallops
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley (optional)
Instructions
- Pat scallops dry and season with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat.
- Sear scallops for 2–3 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, melt butter and sauté garlic until fragrant.
- Add sun-dried tomatoes and cook briefly.
- Pour in chicken broth and heavy cream, bringing to a simmer.
- Stir in Parmesan cheese and Italian seasoning until smooth.
- Add spinach and cook until wilted.
- Return scallops to the pan and spoon sauce over them.
- Drizzle lemon juice and garnish with parsley.
- Serve warm.
Notes
- Pat scallops dry to achieve a good sear.
- Do not overcrowd the pan.
- Use fresh scallops for best flavor.
- Serve with pasta, rice, or crusty bread.
