Description

A luxurious yet easy dinner featuring tender scallops seared to perfection and served in a creamy Tuscan-style sauce with garlic, sun-dried tomatoes, and spinach.


Ingredients

  • 1 lb sea scallops
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley (optional)


Instructions

  1. Pat scallops dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear scallops for 2–3 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, melt butter and sauté garlic until fragrant.
  5. Add sun-dried tomatoes and cook briefly.
  6. Pour in chicken broth and heavy cream, bringing to a simmer.
  7. Stir in Parmesan cheese and Italian seasoning until smooth.
  8. Add spinach and cook until wilted.
  9. Return scallops to the pan and spoon sauce over them.
  10. Drizzle lemon juice and garnish with parsley.
  11. Serve warm.
