Ingredients
- 2 chicken breasts, sliced or cubed
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 1/2 cups mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken with salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
- In the same pan, melt butter and sauté onion until soft.
- Add garlic and mushrooms and cook for 4-5 minutes until mushrooms are tender.
- Pour in chicken broth and simmer for 2 minutes.
- Add heavy cream and parmesan cheese, stirring until the sauce is smooth.
- Return chicken to the skillet and coat with the creamy mushroom sauce.
- Simmer for another 3-4 minutes until slightly thickened.
- Garnish with parsley before serving.
