Creamy Chicken with Sun-Dried Tomatoes is a rich and comforting skillet dish featuring juicy chicken breasts simmered in a garlic parmesan cream sauce with tangy sun-dried tomatoes and herbs.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 2 cups fresh spinach (optional)
  • 1 tablespoon chopped parsley for garnish


Instructions

  1. Season chicken breasts with salt, black pepper, Italian seasoning, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes per side until golden brown and fully cooked. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant.
  5. Add sun-dried tomatoes and cook for 1-2 minutes.
  6. Pour in chicken broth and simmer for 2 minutes.
  7. Stir in heavy cream and parmesan cheese until smooth and creamy.
  8. Add spinach and cook until wilted if using.
  9. Return chicken to the skillet and spoon sauce over the top.
  10. Simmer for 3-4 minutes until heated through.
  11. Garnish with parsley and serve warm.
