Ingredients
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated parmesan cheese
- 2 cups fresh spinach (optional)
- 1 tablespoon chopped parsley for garnish
Instructions
- Season chicken breasts with salt, black pepper, Italian seasoning, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook for 5-6 minutes per side until golden brown and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add sun-dried tomatoes and cook for 1-2 minutes.
- Pour in chicken broth and simmer for 2 minutes.
- Stir in heavy cream and parmesan cheese until smooth and creamy.
- Add spinach and cook until wilted if using.
- Return chicken to the skillet and spoon sauce over the top.
- Simmer for 3-4 minutes until heated through.
- Garnish with parsley and serve warm.
