Description

A rich and comforting pasta dish featuring tender chicken, sun-dried tomatoes, and spinach in a creamy garlic Parmesan sauce with Tuscan-inspired flavors.


Ingredients

  • 12 oz penne or fettuccine pasta
  • 2 boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season sliced chicken with salt, pepper, and paprika.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  5. In the same skillet, sauté garlic for about 30 seconds until fragrant.
  6. Pour in chicken broth and heavy cream, stirring well.
  7. Add Italian seasoning and bring the sauce to a gentle simmer.
  8. Stir in Parmesan cheese until melted and smooth.
  9. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  10. Return the cooked chicken to the skillet and mix well.
  11. Add the cooked pasta and toss until fully coated in the creamy sauce.
  12. Garnish with chopped parsley and extra Parmesan before serving.

  • Use oil-packed sun-dried tomatoes for extra flavor.
  • Reserve a little pasta water to thin the sauce if needed.
  • Fresh basil can be added for extra freshness.
