Description

Cheesy Garlic Chicken Zucchini Skillet is a quick and comforting one-pan meal packed with juicy chicken, tender zucchini, garlic, and melted cheese in a flavorful low-carb skillet dinner.


Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 2 medium zucchini, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped parsley


Instructions

  1. Season diced chicken with salt, black pepper, Italian seasoning, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 6-8 minutes until golden brown and fully cooked.
  4. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Stir in sliced zucchini and cook for 4-5 minutes until tender but not mushy.
  6. Reduce heat to low and sprinkle mozzarella, cheddar, and parmesan cheese evenly over the skillet.
  7. Cover and cook for 2-3 minutes until cheese is melted and bubbly.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Do not overcook zucchini to keep it slightly crisp.
  • Add red pepper flakes for extra heat.
  • Serve on its own or over rice, pasta, or cauliflower rice.
