Ingredients
- 1 lb boneless skinless chicken breasts, diced
- 2 medium zucchini, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon paprika
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Season diced chicken with salt, black pepper, Italian seasoning, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook for 6-8 minutes until golden brown and fully cooked.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in sliced zucchini and cook for 4-5 minutes until tender but not mushy.
- Reduce heat to low and sprinkle mozzarella, cheddar, and parmesan cheese evenly over the skillet.
- Cover and cook for 2-3 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot.
Notes
- Do not overcook zucchini to keep it slightly crisp.
- Add red pepper flakes for extra heat.
- Serve on its own or over rice, pasta, or cauliflower rice.
- Use freshly shredded cheese for better melting.
