Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Catalina dressing
  • 1/2 cup apricot or peach preserves
  • 1 packet (1 oz) dry onion soup mix
  • 1/2 tsp black pepper
  • Optional: chopped parsley for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place chicken breasts in a greased baking dish.
  3. In a bowl, mix Catalina dressing, fruit preserves, onion soup mix, and black pepper.
  4. Pour sauce evenly over the chicken.
  5. Cover with foil and bake for 25 minutes.
  6. Remove foil and bake an additional 15–20 minutes until chicken is cooked through and sauce is slightly caramelized.
  7. Spoon sauce over chicken before serving and garnish with parsley if desired.
