Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Catalina dressing
- 1/2 cup apricot or peach preserves
- 1 packet (1 oz) dry onion soup mix
- 1/2 tsp black pepper
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Place chicken breasts in a greased baking dish.
- In a bowl, mix Catalina dressing, fruit preserves, onion soup mix, and black pepper.
- Pour sauce evenly over the chicken.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 15–20 minutes until chicken is cooked through and sauce is slightly caramelized.
- Spoon sauce over chicken before serving and garnish with parsley if desired.

- Use chicken thighs for a juicier option.
- Apricot preserves provide a classic flavor, but peach or orange marmalade works too.
