Ingredients
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 jalapeños, seeded and finely diced
- 8 slices beef bacon or turkey bacon
- 1 tablespoon olive oil
- 1 tablespoon chopped parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice a pocket into each chicken breast without cutting all the way through.
- Season chicken with salt, black pepper, and garlic powder.
- In a bowl, mix cream cheese, cheddar cheese, and diced jalapeños.
- Stuff each chicken breast evenly with the cream cheese mixture.
- Wrap each stuffed chicken breast with 2 slices of bacon.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken for 2-3 minutes per side until bacon begins to crisp.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken is fully cooked.
- Broil for 2-3 minutes if needed to crisp the bacon further.
- Garnish with chopped parsley and serve hot.
