Description

Bacon Wrapped Jalapeño Popper Chicken is a flavorful and cheesy chicken dish stuffed with creamy jalapeño filling, wrapped in crispy bacon, and baked until golden and juicy.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeños, seeded and finely diced
  • 8 slices beef bacon or turkey bacon
  • 1 tablespoon olive oil
  • 1 tablespoon chopped parsley for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Season chicken with salt, black pepper, and garlic powder.
  4. In a bowl, mix cream cheese, cheddar cheese, and diced jalapeños.
  5. Stuff each chicken breast evenly with the cream cheese mixture.
  6. Wrap each stuffed chicken breast with 2 slices of bacon.
  7. Heat olive oil in an oven-safe skillet over medium-high heat.
  8. Sear chicken for 2-3 minutes per side until bacon begins to crisp.
  9. Transfer skillet to the oven and bake for 20-25 minutes until chicken is fully cooked.
  10. Broil for 2-3 minutes if needed to crisp the bacon further.
  11. Garnish with chopped parsley and serve hot.
