Description
A bright and tangy zesty garlic dressing made with fresh garlic, citrus, and olive oil—perfect for salads, roasted vegetables, or as a marinade.
Ingredients
- 1/2 cup extra virgin olive oil
- 3 cloves garlic, finely minced
- 1/4 cup fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tsp lemon zest
- 1 tsp honey or maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, finely chopped (optional)
Instructions
- Add olive oil, lemon juice, Dijon mustard, honey or maple syrup, lemon zest, salt, and black pepper to a bowl or jar.
- Whisk or shake well until emulsified.
- Add minced garlic and parsley, then mix again.
- Taste and adjust salt, acidity, or sweetness as desired.
- Use immediately or refrigerate before serving.
Notes
- Let the dressing rest for 10 minutes to mellow the garlic flavor.
- Store in an airtight container in the refrigerator for up to 5 days.
