Description

A bright and tangy zesty garlic dressing made with fresh garlic, citrus, and olive oil—perfect for salads, roasted vegetables, or as a marinade.


Ingredients

  • 1/2 cup extra virgin olive oil
  • 3 cloves garlic, finely minced
  • 1/4 cup fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp lemon zest
  • 1 tsp honey or maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, finely chopped (optional)


Instructions

  1. Add olive oil, lemon juice, Dijon mustard, honey or maple syrup, lemon zest, salt, and black pepper to a bowl or jar.
  2. Whisk or shake well until emulsified.
  3. Add minced garlic and parsley, then mix again.
  4. Taste and adjust salt, acidity, or sweetness as desired.
  5. Use immediately or refrigerate before serving.

Notes

  • Let the dressing rest for 10 minutes to mellow the garlic flavor.
  • Store in an airtight container in the refrigerator for up to 5 days.
