Ingredients

  • 2 cups cooked chicken breast, shredded
  • 8 flour tortillas (medium size)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, season the shredded chicken with olive oil, salt, pepper, paprika, and garlic powder.
  3. Spoon the chicken evenly onto each tortilla, roll tightly, and place seam-side down in the baking dish.
  4. In a saucepan over medium heat, melt butter and whisk in flour. Cook for 1 minute.
  5. Gradually whisk in milk until smooth and slightly thickened.
  6. Reduce heat and stir in cheddar, mozzarella, and Parmesan until melted and creamy.
  7. Pour the cheese sauce evenly over the wrapped tortillas.
  8. Bake uncovered for 25–30 minutes until the sauce is bubbly and lightly golden.
  9. Let rest for 5 minutes before serving.
