Description

Taco Rice is a quick and flavorful dish combining seasoned ground beef, fluffy rice, and classic taco toppings. It’s an easy one-bowl meal inspired by Tex-Mex flavors and perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup uncooked long-grain white rice
  • 2 cups water or beef broth
  • 1 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup salsa
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 2 tbsp olive oil
  • Salt to taste


Instructions

  1. Cook rice according to package instructions using water or beef broth; set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add ground beef and cook until browned; drain excess fat.
  4. Stir in taco seasoning and a splash of water; simmer for 2–3 minutes.
  5. In serving bowls, add a layer of cooked rice.
  6. Top rice with seasoned beef.
  7. Add shredded lettuce, diced tomatoes, salsa, and cheese.
  8. Serve warm and enjoy.

Notes

  • You can add sour cream or avocado as toppings.
  • Substitute ground turkey or chicken if desired.
