Description
Taco Rice is a quick and flavorful dish combining seasoned ground beef, fluffy rice, and classic taco toppings. It’s an easy one-bowl meal inspired by Tex-Mex flavors and perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning (about 1 oz)
- 1 cup uncooked long-grain white rice
- 2 cups water or beef broth
- 1 cup shredded cheddar or Mexican-blend cheese
- 1/2 cup salsa
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 2 tbsp olive oil
- Salt to taste
Instructions
- Cook rice according to package instructions using water or beef broth; set aside.
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook until browned; drain excess fat.
- Stir in taco seasoning and a splash of water; simmer for 2–3 minutes.
- In serving bowls, add a layer of cooked rice.
- Top rice with seasoned beef.
- Add shredded lettuce, diced tomatoes, salsa, and cheese.
- Serve warm and enjoy.
Notes
- You can add sour cream or avocado as toppings.
- Substitute ground turkey or chicken if desired.
