Description

Taco Gnocchi Bake is a cheesy, comforting fusion dish that combines soft potato gnocchi with seasoned taco meat, salsa, and melted cheese for an easy weeknight casserole.


Ingredients

  • 1 lb ground beef
  • 1 (16 oz) package potato gnocchi
  • 1 packet taco seasoning (about 2 tablespoons)
  • 1/2 cup water
  • 1 cup salsa
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 1/2 cups shredded Mexican blend cheese
  • 1/2 teaspoon salt (optional, to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (for garnish)
  • Sour cream and sliced green onions for topping (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef. Stir and simmer for 3–4 minutes until thickened.
  4. Stir in salsa, black beans, corn, salt, and pepper.
  5. Add uncooked gnocchi to the skillet and mix well to combine.
  6. Transfer mixture to the prepared baking dish and spread evenly.
  7. Top with shredded cheese.
  8. Bake uncovered for 20–25 minutes, until gnocchi is tender and cheese is melted and bubbly.
  9. Garnish with chopped cilantro and desired toppings before serving.
