Taco Gnocchi Bake is a cheesy, comforting fusion dish that combines soft potato gnocchi with seasoned taco meat, salsa, and melted cheese for an easy weeknight casserole.
Ingredients
- 1 lb ground beef
- 1 (16 oz) package potato gnocchi
- 1 packet taco seasoning (about 2 tablespoons)
- 1/2 cup water
- 1 cup salsa
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 1/2 cups shredded Mexican blend cheese
- 1/2 teaspoon salt (optional, to taste)
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro (for garnish)
- Sour cream and sliced green onions for topping (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Stir and simmer for 3–4 minutes until thickened.
- Stir in salsa, black beans, corn, salt, and pepper.
- Add uncooked gnocchi to the skillet and mix well to combine.
- Transfer mixture to the prepared baking dish and spread evenly.
- Top with shredded cheese.
- Bake uncovered for 20–25 minutes, until gnocchi is tender and cheese is melted and bubbly.
- Garnish with chopped cilantro and desired toppings before serving.

- Substitute ground turkey or chicken for a lighter option.
- Use spicy salsa for extra heat.
- Vegetarian version: replace meat with extra beans and sautéed vegetables.
