Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 6 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 2 tbsp hot honey
- 1 tbsp fresh parsley or thyme, chopped
Instructions
- Preheat oven to 425°F (220°C).
- Toss sweet potato cubes with olive oil, salt, pepper, and smoked paprika.
- Spread evenly on a baking sheet and roast for 25–30 minutes, turning once, until tender and caramelized.
- While potatoes roast, blend feta, Greek yogurt, and lemon juice until smooth and creamy.
- Spread whipped feta onto a serving plate.
- Top with roasted sweet potatoes.
- Drizzle hot honey over the top.
- Garnish with fresh herbs and serve warm.
Notes
- You can make hot honey by warming honey with chili flakes.
- Serve as a side dish or vegetarian main.
- Walnuts or pistachios add a nice crunch if desired.
