Street Corn Chicken Casserole is a creamy, cheesy baked dish inspired by Mexican street corn (elote), combining tender chicken, sweet corn, spices, and melted cheese for a comforting and flavorful meal.
Ingredients
- 2 cups cooked chicken breast, shredded
- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled cotija cheese (or feta)
- 1/2 cup chopped red onion
- 1/2 cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Juice of 1 lime
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a casserole dish.
- In a large bowl, combine sour cream, mayonnaise, chili powder, paprika, cumin, garlic powder, salt, pepper, and lime juice.
- Add the shredded chicken, corn, red onion, cilantro, mozzarella cheese, and olive oil to the bowl. Mix until well combined.
- Transfer the mixture into the prepared casserole dish and spread evenly.
- Sprinkle cotija cheese evenly over the top.
- Bake uncovered for 25–30 minutes, or until bubbly and lightly golden on top.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- You can substitute Greek yogurt for sour cream for a lighter version.
- Add diced jalapeños for extra heat.
- Serve with tortilla chips, rice, or a fresh green salad.
