Description

Street Corn Chicken Casserole is a creamy, cheesy baked dish inspired by Mexican street corn (elote), combining tender chicken, sweet corn, spices, and melted cheese for a comforting and flavorful meal.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • Juice of 1 lime


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a casserole dish.
  2. In a large bowl, combine sour cream, mayonnaise, chili powder, paprika, cumin, garlic powder, salt, pepper, and lime juice.
  3. Add the shredded chicken, corn, red onion, cilantro, mozzarella cheese, and olive oil to the bowl. Mix until well combined.
  4. Transfer the mixture into the prepared casserole dish and spread evenly.
  5. Sprinkle cotija cheese evenly over the top.
  6. Bake uncovered for 25–30 minutes, or until bubbly and lightly golden on top.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • You can substitute Greek yogurt for sour cream for a lighter version.
  • Add diced jalapeños for extra heat.
  • Serve with tortilla chips, rice, or a fresh green salad.
