Description

Spicy Kimchi Bulgogi Cheesesteak is a bold fusion sandwich combining sweet-and-spicy Korean bulgogi beef with tangy kimchi, melted cheese, and a soft hoagie roll for a crave-worthy, umami-packed meal.


Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1/3 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 cup kimchi, chopped
  • 1 medium onion, thinly sliced
  • 1 tbsp vegetable oil
  • 4 hoagie rolls
  • 8 slices provolone or mozzarella cheese
  • 2 green onions, sliced


Instructions

  1. In a bowl, mix soy sauce, brown sugar, gochujang, sesame oil, garlic, and ginger.
  2. Add sliced beef to the marinade and let sit for at least 20 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add onions and cook until softened, about 3 minutes.
  5. Add marinated beef and cook until browned and cooked through, about 4–5 minutes.
  6. Stir in chopped kimchi and cook for another 2 minutes.
  7. Divide the beef mixture into four portions in the pan and top each with cheese slices.
  8. Cover briefly until cheese melts.
  9. Toast hoagie rolls lightly and fill each with a portion of the beef mixture.
  10. Garnish with green onions and serve hot.

Notes

  • For extra heat, add sliced fresh chilies or more gochujang.
  • Kimchi should be well-fermented for best flavor.
  • Serve with fries or pickled vegetables.
