Ingredients
- 4 bone-in pork chops (1 to 1½ inches thick)
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- Wood chips or pellets (apple or hickory recommended)
Instructions
- Preheat smoker to 225°F (110°C).
- Pat pork chops dry and brush lightly with olive oil.
- In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and thyme.
- Season pork chops generously on all sides with the spice mixture.
- Place pork chops directly on the smoker grates.
- Smoke for 60–90 minutes, until internal temperature reaches 145°F (63°C).
- Remove pork chops from smoker and let rest for 5 minutes before serving.

- Use a meat thermometer for accurate doneness.
- Applewood provides a mild smoke flavor, while hickory is stronger.
