Description
Silky and rich French chocolate flan with a smooth custard texture and deep cocoa flavor, baked gently for a classic elegant dessert.
Ingredients
- 2 cups whole milk
- 1/2 cup heavy cream
- 5 oz (140 g) dark chocolate, chopped
- 3 large eggs
- 1/2 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp cornstarch
Instructions
- Preheat oven to 325°F (165°C).
- In a saucepan, heat milk and heavy cream until just steaming (do not boil).
- Add chopped chocolate and stir until completely melted and smooth.
- In a bowl, whisk eggs and sugar until well combined.
- Whisk in cocoa powder, cornstarch, vanilla extract, and salt.
- Slowly pour warm chocolate mixture into the egg mixture while whisking continuously.
- Strain mixture for extra smoothness, then pour into a greased baking dish or ramekins.
- Place dish in a larger pan and add hot water halfway up the sides (water bath).
- Bake for 40–50 minutes until set but slightly jiggly in the center.
- Cool to room temperature, then refrigerate for at least 3 hours before serving.

- Baking in a water bath ensures a silky texture without cracks.
- Use high-quality dark chocolate for best flavor.
- Serve chilled with whipped cream or fresh berries.
