Description

Shamrock Shake Pie is a creamy no-bake dessert inspired by the classic minty milkshake, featuring a smooth mint cheesecake filling in a chocolate cookie crust topped with whipped cream.


Ingredients

  • 24 chocolate sandwich cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon peppermint extract
  • 45 drops green food coloring
  • 1 1/2 cups whipped topping (plus extra for garnish)
  • 1/2 cup mini chocolate chips


Instructions

  1. In a bowl, combine crushed chocolate cookies and melted butter until evenly coated.
  2. Press mixture firmly into the bottom and sides of a 9-inch pie dish to form the crust. Chill for 30 minutes.
  3. In a mixing bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add peppermint extract and green food coloring; mix until evenly combined.
  5. Fold in whipped topping and mini chocolate chips gently.
  6. Spread the filling evenly into the chilled crust.
  7. Refrigerate for at least 4 hours, or until set.
  8. Garnish with additional whipped topping and chocolate chips before serving.
