Description

Revani is a classic Turkish semolina cake soaked in fragrant sugar syrup, light yet moist, and traditionally flavored with lemon or orange.


Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt
  • 1/2 cup vegetable oil
  • 1 cup semolina
  • 1 cup all-purpose flour
  • 1 packet (2 tsp) baking powder
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for syrup)
  • 1 cup water (for syrup)
  • 1 tablespoon lemon juice
  • Lemon zest or shredded coconut for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a rectangular baking pan.
  2. In a large bowl, beat eggs and sugar until pale and fluffy.
  3. Add yogurt, oil, and vanilla; mix well.
  4. Stir in semolina.
  5. In a separate bowl, whisk flour and baking powder, then add to the batter.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes until golden and a toothpick comes out clean.
  8. While baking, combine sugar and water in a saucepan and boil for 10 minutes.
  9. Add lemon juice to syrup and remove from heat.
  10. Pour hot syrup evenly over the hot cake.
  11. Let cool completely and absorb syrup.
  12. Garnish with lemon zest or coconut before serving.

Notes

  • Both cake and syrup should be hot when combined.
  • Let rest at least 1 hour before slicing.
  • Traditionally served with tea.
