Description
Poutine is a classic Canadian comfort food made with crispy golden French fries topped with fresh cheese curds and smothered in rich, savory brown gravy.
Ingredients
- 4 large russet potatoes, cut into fries
- Vegetable oil, for frying
- 2 cups fresh cheese curds
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
- Fry potatoes in batches for 4–5 minutes until lightly golden. Remove and drain.
- Increase oil temperature to 375°F (190°C) and fry again for 2–3 minutes until crispy and golden brown. Drain and lightly salt.
- In a saucepan over medium heat, melt butter.
- Whisk in flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in beef broth and Worcestershire sauce, stirring constantly until thickened.
- Season gravy with salt and pepper.
- Place hot fries on a serving plate, scatter cheese curds evenly over them.
- Pour hot gravy generously over the fries and curds.
- Serve immediately while cheese is soft and slightly melted.

- Gravy should be hot enough to slightly melt the curds.
