Description

Potato Pancakes (Kartoffelpuffer) are traditional German crispy fritters made from grated potatoes and onions, pan-fried until golden brown and crunchy on the outside while tender inside.


Ingredients

  • 2 lbs russet potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying


Instructions

  1. Grate the potatoes and onion using a box grater.
  2. Place grated mixture in a clean towel and squeeze out as much liquid as possible.
  3. Transfer to a bowl and add eggs, flour, salt, and pepper. Mix well.
  4. Heat oil in a skillet over medium-high heat.
  5. Scoop spoonfuls of the mixture into the pan and flatten slightly.
  6. Fry for 3–4 minutes per side until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. Serve hot.

Notes

  • Serve with applesauce or sour cream.
  • Work quickly to prevent potatoes from browning.
  • Keep warm in a low oven if cooking in batches.
