Description
Potato Pancakes (Kartoffelpuffer) are traditional German crispy fritters made from grated potatoes and onions, pan-fried until golden brown and crunchy on the outside while tender inside.
Ingredients
- 2 lbs russet potatoes, peeled
- 1 small onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- Grate the potatoes and onion using a box grater.
- Place grated mixture in a clean towel and squeeze out as much liquid as possible.
- Transfer to a bowl and add eggs, flour, salt, and pepper. Mix well.
- Heat oil in a skillet over medium-high heat.
- Scoop spoonfuls of the mixture into the pan and flatten slightly.
- Fry for 3–4 minutes per side until golden brown and crispy.
- Remove and drain on paper towels.
- Serve hot.
Notes
- Serve with applesauce or sour cream.
- Work quickly to prevent potatoes from browning.
- Keep warm in a low oven if cooking in batches.
