Description
Polish Pork Roll is a traditional hearty dish featuring pork loin rolled with a savory filling of bacon, onions, and herbs, then roasted until tender and flavorful.
Ingredients
- 2 pounds pork loin, butterflied
- 5 slices bacon, finely chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon mustard
- 1 teaspoon marjoram
- 1 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons vegetable oil
- 1/2 cup beef or chicken broth
Instructions
- Preheat the oven to 350°F (175°C).
- Season the butterflied pork loin on both sides with salt, pepper, paprika, and marjoram.
- In a skillet, heat the oil and cook the chopped bacon until lightly crisp.
- Add the onion and garlic to the skillet and sauté until soft and fragrant. Remove from heat and let cool slightly.
- Spread mustard evenly over the pork, then distribute the bacon-onion mixture on top.
- Roll the pork tightly and secure with kitchen twine.
- Heat the same skillet over medium-high heat and sear the pork roll on all sides until browned.
- Transfer the pork to a roasting pan, add broth, cover, and roast for 60–70 minutes, basting occasionally.
- Remove cover for the last 10 minutes to allow browning.
- Let rest for 10 minutes before slicing and serving.
Notes
- Allow the pork to rest before slicing to retain juices.
- Serve with mashed potatoes, sauerkraut, or roasted vegetables.
- Leftovers make excellent sandwiches.
