Description

Polish Pork Roll is a traditional hearty dish featuring pork loin rolled with a savory filling of bacon, onions, and herbs, then roasted until tender and flavorful.


Ingredients

  • 2 pounds pork loin, butterflied
  • 5 slices bacon, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon mustard
  • 1 teaspoon marjoram
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1/2 cup beef or chicken broth


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the butterflied pork loin on both sides with salt, pepper, paprika, and marjoram.
  3. In a skillet, heat the oil and cook the chopped bacon until lightly crisp.
  4. Add the onion and garlic to the skillet and sauté until soft and fragrant. Remove from heat and let cool slightly.
  5. Spread mustard evenly over the pork, then distribute the bacon-onion mixture on top.
  6. Roll the pork tightly and secure with kitchen twine.
  7. Heat the same skillet over medium-high heat and sear the pork roll on all sides until browned.
  8. Transfer the pork to a roasting pan, add broth, cover, and roast for 60–70 minutes, basting occasionally.
  9. Remove cover for the last 10 minutes to allow browning.
  10. Let rest for 10 minutes before slicing and serving.

Notes

  • Allow the pork to rest before slicing to retain juices.
  • Serve with mashed potatoes, sauerkraut, or roasted vegetables.
  • Leftovers make excellent sandwiches.
