Description
A crispy, golden grilled cheese sandwich elevated with fragrant basil pesto and gooey melted cheese—simple, comforting, and full of flavor.
Ingredients
- 4 slices bread (sourdough or white)
- 2 tbsp basil pesto
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter, softened
Instructions
- Heat a skillet or griddle over medium heat.
- Butter one side of each bread slice.
- Spread pesto evenly on the unbuttered side of two bread slices.
- Top pesto with mozzarella and cheddar cheese.
- Place remaining bread slices on top, buttered side facing out.
- Cook sandwiches on the skillet until golden brown on one side.
- Flip carefully and cook until the other side is golden and cheese is melted.
- Remove from heat, slice, and serve warm.
Notes
- Add sliced tomatoes or cooked chicken for extra flavor.
- Use vegan cheese and dairy-free butter for a vegan version.
