Description
Patate Arrosto is a classic Italian side dish made with oven-roasted potatoes seasoned with olive oil, garlic, and herbs until crispy on the outside and tender inside.
Ingredients
- 1 kg potatoes
- 4 tbsp extra virgin olive oil
- 2 cloves garlic, crushed
- 2 sprigs fresh rosemary
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 200°C (390°F).
- Peel the potatoes and cut them into evenly sized chunks.
- Boil the potatoes in salted water for 8–10 minutes until just tender but not fully cooked.
- Drain the potatoes well and let them steam dry for a few minutes.
- Place the potatoes in a large baking tray, add olive oil, garlic, rosemary, salt, and pepper.
- Toss well to coat evenly.
- Roast in the oven for 40–45 minutes, turning occasionally, until golden and crispy.
- Remove from oven and serve hot.
Notes
- For extra crispiness, use floury potatoes.
- You can add thyme or oregano for extra flavor.
- Serve immediately for best texture.
