Description

Patate Arrosto is a classic Italian side dish made with oven-roasted potatoes seasoned with olive oil, garlic, and herbs until crispy on the outside and tender inside.


Ingredients

  • 1 kg potatoes
  • 4 tbsp extra virgin olive oil
  • 2 cloves garlic, crushed
  • 2 sprigs fresh rosemary
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Peel the potatoes and cut them into evenly sized chunks.
  3. Boil the potatoes in salted water for 8–10 minutes until just tender but not fully cooked.
  4. Drain the potatoes well and let them steam dry for a few minutes.
  5. Place the potatoes in a large baking tray, add olive oil, garlic, rosemary, salt, and pepper.
  6. Toss well to coat evenly.
  7. Roast in the oven for 40–45 minutes, turning occasionally, until golden and crispy.
  8. Remove from oven and serve hot.

Notes

  • For extra crispiness, use floury potatoes.
  • You can add thyme or oregano for extra flavor.
  • Serve immediately for best texture.
