Ingredients

  • 1 1/4 cups boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 jar (7 oz) marshmallow creme
  • 1 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Pour boiling water over oats and let sit for 20 minutes.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Stir in soaked oats.
  6. In a separate bowl, whisk flour, baking soda, cinnamon, and salt.
  7. Gradually add dry ingredients to wet mixture until just combined.
  8. Divide batter evenly between prepared pans.
  9. Bake for 25–30 minutes until a toothpick inserted comes out clean.
  10. Cool cakes completely.
  11. For the filling, beat butter until creamy, then add powdered sugar, marshmallow creme, and vanilla.
