Description
No-bake cream cheese coconut snowballs are bite-sized treats made with a smooth cream cheese center, lightly sweetened and coated in shredded coconut for a soft, snowy dessert.
Ingredients
- 225 g cream cheese, softened
- 120 g powdered sugar
- 1 tsp vanilla extract
- 180 g shredded coconut (plus extra for coating)
- 2 tbsp coconut oil or unsalted butter, melted
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Stir in shredded coconut and melted coconut oil until a thick mixture forms.
- Refrigerate the mixture for 20–30 minutes to firm up.
- Scoop and roll the mixture into small balls.
- Roll each ball in additional shredded coconut to coat evenly.
- Chill for at least 1 hour before serving.
Notes
- Use finely shredded coconut for a smoother texture.
- These snowballs can be stored in the refrigerator for up to 5 days.
- You may add a splash of almond extract for extra flavor.
