Description

No-bake cream cheese coconut snowballs are bite-sized treats made with a smooth cream cheese center, lightly sweetened and coated in shredded coconut for a soft, snowy dessert.


Ingredients

  • 225 g cream cheese, softened
  • 120 g powdered sugar
  • 1 tsp vanilla extract
  • 180 g shredded coconut (plus extra for coating)
  • 2 tbsp coconut oil or unsalted butter, melted


Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until well combined.
  3. Stir in shredded coconut and melted coconut oil until a thick mixture forms.
  4. Refrigerate the mixture for 20–30 minutes to firm up.
  5. Scoop and roll the mixture into small balls.
  6. Roll each ball in additional shredded coconut to coat evenly.
  7. Chill for at least 1 hour before serving.

  • Use finely shredded coconut for a smoother texture.
