Description

Mozzarella Stuffed Bacon Wrapped Meatloaf is a juicy and flavorful meatloaf filled with gooey mozzarella cheese and wrapped in crispy bacon for the ultimate comfort meal.


Ingredients

  • 900 g ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 200 g mozzarella cheese (block or sticks)
  • 810 slices bacon
  • 1/4 cup barbecue sauce (for topping)


Instructions

  1. Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and parsley.
  3. Mix until just combined.
  4. On a sheet of parchment paper, flatten meat mixture into a rectangle.
  5. Place mozzarella cheese in the center lengthwise.
  6. Carefully roll meat around cheese, sealing edges tightly.
  7. Transfer to prepared baking sheet seam-side down.
  8. Lay bacon slices over the top, tucking ends underneath.
  9. Brush with barbecue sauce.
  10. Bake for 55–65 minutes until internal temperature reaches 75°C (165°F).
  11. Let rest 10 minutes before slicing.

Notes

  • Do not overmix the meat to keep it tender.
  • Drain excess grease halfway through cooking if needed.
  • Resting helps keep cheese from spilling out when sliced.
