Description
Mozzarella Stuffed Bacon Wrapped Meatloaf is a juicy and flavorful meatloaf filled with gooey mozzarella cheese and wrapped in crispy bacon for the ultimate comfort meal.
Ingredients
- 900 g ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
- 200 g mozzarella cheese (block or sticks)
- 8–10 slices bacon
- 1/4 cup barbecue sauce (for topping)
Instructions
- Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and parsley.
- Mix until just combined.
- On a sheet of parchment paper, flatten meat mixture into a rectangle.
- Place mozzarella cheese in the center lengthwise.
- Carefully roll meat around cheese, sealing edges tightly.
- Transfer to prepared baking sheet seam-side down.
- Lay bacon slices over the top, tucking ends underneath.
- Brush with barbecue sauce.
- Bake for 55–65 minutes until internal temperature reaches 75°C (165°F).
- Let rest 10 minutes before slicing.
Notes
- Do not overmix the meat to keep it tender.
- Drain excess grease halfway through cooking if needed.
- Resting helps keep cheese from spilling out when sliced.
