Mac and Cheese Quesadillas are a fun, indulgent mashup combining creamy macaroni and cheese with crispy, golden tortillas for a comforting and kid-friendly meal or snack.
Ingredients
- 2 cups prepared macaroni and cheese
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter or oil for cooking
Instructions
- Heat a large skillet over medium heat and lightly grease with butter or oil.
- Place one tortilla flat in the skillet.
- Spread a layer of macaroni and cheese evenly over half of the tortilla.
- Sprinkle cheddar and mozzarella cheese over the macaroni.
- Fold the tortilla in half and cook for 2–3 minutes per side until golden brown and the cheese is melted.
- Remove from the skillet and repeat with remaining tortillas.
- Slice into wedges and serve warm.
Notes
- Use leftover mac and cheese for best results.
- Add cooked bacon bits or jalapeños for extra flavor.
- Serve with salsa, sour cream, or ranch for dipping.
