Description
A classic British dessert made with just cream, sugar, and fresh lemon juice, resulting in a luxuriously smooth and tangy set cream.
Ingredients
- 2 cups (480 ml) heavy cream
- 3/4 cup granulated sugar
- 1/3 cup fresh lemon juice (about 2 lemons)
- 1 tbsp lemon zest (optional, for extra flavor)
Instructions
- Pour the heavy cream and sugar into a saucepan and stir to combine.
- Bring the mixture to a gentle boil over medium heat, stirring constantly.
- Once boiling, reduce heat slightly and simmer for 3 minutes.
- Remove from heat and stir in fresh lemon juice and lemon zest if using.
- Allow the mixture to cool for 5 minutes.
- Pour into serving glasses or ramekins.
- Refrigerate for at least 4 hours, or until fully set.
Notes
- The acid from the lemon naturally thickens the cream.
- Do not reduce the cream amount or it may not set properly.
- Garnish with berries or mint before serving if desired.
