Ingredients

  • 2 cups (480 ml) heavy cream
  • 3/4 cup granulated sugar
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 tbsp lemon zest (optional, for extra flavor)


Instructions

  1. Pour the heavy cream and sugar into a saucepan and stir to combine.
  2. Bring the mixture to a gentle boil over medium heat, stirring constantly.
  3. Once boiling, reduce heat slightly and simmer for 3 minutes.
  4. Remove from heat and stir in fresh lemon juice and lemon zest if using.
  5. Allow the mixture to cool for 5 minutes.
  6. Pour into serving glasses or ramekins.
  7. Refrigerate for at least 4 hours, or until fully set.

Notes

  • The acid from the lemon naturally thickens the cream.
