Ingredients

  • 2 tablespoons avocado oil or sesame oil
  • 1 pound boneless skinless chicken breast, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups green cabbage, shredded
  • 1 cup napa cabbage or coleslaw mix
  • 2 tablespoons soy sauce or tamari (low sodium)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar-free sweetener (optional)
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Heat avocado oil in a large skillet or wok over medium-high heat.
  2. Season chicken with salt and pepper, then add to the pan and stir-fry until cooked through. Remove and set aside.

  4. Add shredded cabbage and stir-fry for 3–5 minutes until slightly softened but still crisp.
  5. Return chicken to the pan and stir to combine.
  6. Add soy sauce, rice vinegar, sesame oil, and sweetener if using. Toss well to coat.
  7. Cook for another 2 minutes, then remove from heat.
  8. Garnish with green onions and sesame seeds before serving.

Notes

  • Use tamari or coconut aminos for a gluten-free option.
