Keto Almond Joy fat bombs are rich, chocolatey low-carb treats made with coconut, almond butter, and sugar-free chocolate—perfect for satisfying sweet cravings while staying keto-friendly.
Ingredients
- 1 cup unsweetened shredded coconut
- 1/2 cup almond butter (unsweetened)
- 1/4 cup coconut oil, melted
- 2 tablespoons powdered erythritol
- 1/2 teaspoon vanilla extract
- 12 whole almonds
- 1/2 cup sugar-free dark chocolate chips
- 1 teaspoon coconut oil (for melting chocolate)
Instructions
- In a mixing bowl, combine shredded coconut, almond butter, melted coconut oil, powdered erythritol, and vanilla extract. Mix until well combined.
- Scoop mixture into silicone molds or form into small balls (about 1 tablespoon each).
- Press one whole almond into the center of each portion.
- Freeze for 20–30 minutes until firm.
- Melt sugar-free chocolate chips with 1 teaspoon coconut oil until smooth.
- Dip each frozen fat bomb into melted chocolate or drizzle chocolate over the top.
- Return to freezer for 10–15 minutes until chocolate is set.
- Store in the refrigerator or freezer until ready to serve.
Notes
- Keep stored chilled as they soften at room temperature.
