Description

Honey Chipotle Chicken Thighs are juicy, oven-roasted chicken thighs coated in a sweet and smoky honey-chipotle glaze with a touch of garlic and spice.


Ingredients

  • 1 kg chicken thighs, bone-in and skin-on
  • 3 tbsp honey
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 2 tbsp adobo sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, whisk together honey, chipotle peppers, adobo sauce, olive oil, garlic, apple cider vinegar, smoked paprika, cumin, salt, and pepper.
  3. Pat the chicken thighs dry with paper towels.
  4. Arrange the chicken thighs in a baking dish or on a lined sheet pan.
  5. Brush the honey chipotle sauce generously over the chicken.
  6. Roast in the oven for 35–40 minutes, basting once halfway through.
  7. For extra caramelization, broil for 2–3 minutes at the end.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Adjust chipotle quantity to control heat level.
  • Boneless thighs can be used but will cook faster.
  • Serve with rice, roasted vegetables, or salad.
