Description
Honey Chipotle Chicken Thighs are juicy, oven-roasted chicken thighs coated in a sweet and smoky honey-chipotle glaze with a touch of garlic and spice.
Ingredients
- 1 kg chicken thighs, bone-in and skin-on
- 3 tbsp honey
- 2 tbsp chipotle peppers in adobo sauce, minced
- 2 tbsp adobo sauce
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, whisk together honey, chipotle peppers, adobo sauce, olive oil, garlic, apple cider vinegar, smoked paprika, cumin, salt, and pepper.
- Pat the chicken thighs dry with paper towels.
- Arrange the chicken thighs in a baking dish or on a lined sheet pan.
- Brush the honey chipotle sauce generously over the chicken.
- Roast in the oven for 35–40 minutes, basting once halfway through.
- For extra caramelization, broil for 2–3 minutes at the end.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- Adjust chipotle quantity to control heat level.
- Boneless thighs can be used but will cook faster.
- Serve with rice, roasted vegetables, or salad.
