Ingredients

  • 360 g powdered sugar
  • 2 tbsp unsalted butter, softened
  • 2 tbsp heavy cream or milk
  • 1 1/2 tsp peppermint extract
  • 1/4 tsp vanilla extract
  • 300 g dark chocolate chips
  • 1 tbsp coconut oil or vegetable shortening


Instructions

  1. In a bowl, mix powdered sugar, butter, cream, peppermint extract, and vanilla until a thick dough forms.
  2. Knead the mixture briefly until smooth.
  3. Roll the dough between parchment paper to about 1/4-inch thickness.
  4. Cut into small rounds using a cookie cutter.
  5. Place patties on a baking sheet and freeze for 20 minutes.
  6. Melt chocolate chips with coconut oil until smooth.
  7. Dip each frozen patty into the melted chocolate, coating completely.
  8. Place on parchment paper and let set at room temperature or refrigerate until firm.
